The Four Non-Negotiable Pillars of Dhabihah

Every establishment is measured against these four criteria. A failure on any single pillar triggers a downgrade.

1. Human (Manual) Slaughter

The cut must be performed by a sane, adult Muslim using a sharp knife. Mechanical rotating blades are not valid regardless of who operates them — the Niyyah (intention) of the machine is meaningless.

🗡️

2. The Specific Cut

At minimum three of four vessels must be severed: the windpipe (Hulqum), gullet (Mari'), and both jugular veins (Wadajayn). The Hanafi position requires three of four; failure produces Maytah.

🕌

3. Individual Tasmiyah

"Bismillah Allahu Akbar" must be recited verbally and intentionally by the slaughterman for every individual animal. A batch recitation at line start or an audio recording is not valid by the Hanafi school.

4. No Stunning

Pre-slaughter stunning is avoided entirely. The animal must be alive and its blood must flow freely at the moment of the cut. Cardiac fibrillation from electric stunning causes blood retention, invalidating the meat.

Ihtiyat (Precautionary Principle): Where genuine doubt exists about any of these four pillars, the Hanafi school applies Ihtiyat — precautionary avoidance — based on the hadith of Nu'man ibn Bashir: "The halal is clear, the haram is clear, and between them are doubtful matters." Doubtful meat must be avoided, not consumed.

Full Tier Classification Table

Clarification: HMC certifies the slaughter standard and on-site monitoring. Tier 0 in HalalTracker requires that standard plus independently documented feed and welfare verification — the additional layer brands like H&T Foods advertise separately from HMC slaughter certification.
Tier Designation Technical Criteria Consumer Guidance Shari'ah Status
0 HMC + Feed Verified HMC-certified slaughter; independently documented feed/welfare audit; 24/7 on-site Muslim supervisor; non-stunned; individual Tasmiyah per animal; three-of-four vessel check; no shared line. Prefer and seek out actively. Verified Halal
1 Credibly Self-Verified Muslim dhabih confirmed; non-stunned; individual Tasmiyah; no external audit but no contrary evidence. Small local halal butcher model. Generally acceptable; visit and verify personally if possible. Halal
2 Certified, Minor Gaps Non-stunned claimed; independent (non-HMC) certification; some gaps in audit frequency, chain-of-custody documentation, or dhabih verification. Acceptable with caution; verify certifier's audit standard. Halal (minor concerns)
3 Unverified Chain Non-stunned claimed but certification quality poor; chain-of-custody unresolved; verbal assurance without documentary support; periodic audit only with no traceability. Avoid unless necessity demands. Classified as Mashkook. Mashkook — Doubtful
4 Reversible Stun Claimed Reversible electric stunning (head-only, low-ampere) claimed; Muslim dhabih claimed; some oversight. Reversibility cannot be independently verified on high-speed lines. Avoid. The "reversible stun" claim cannot be verified in practice. Mashkook — Avoid
5 Haram Risk Irreversible stun (captive bolt, gas CAS, HOES); mechanical slaughter on any line; no individual Tasmiyah; mixed Halal/non-Halal lines without segregation. Do not consume. Shari'ah assessment: Maytah or Haram risk. Haram Risk / Avoid
6 Confirmed Not Halal Confirmed non-Muslim dhabih; no Tasmiyah; confirmed Maytah; porcine contamination confirmed; or establishment declined to participate and contrary evidence already on record. Do not consume under any circumstances. Not Halal

How major UK certifiers map to the Tier system

Certifier Stun Policy Mechanical Slaughter On-site Supervision Typical Tier
HMC Non-stunned only Not permitted 24/7 on-site supervisor 0 (with feed verification)
HFA Permits low-voltage EWB Permitted with conditions Periodic audit 34
Self-certified (butcher) Typically non-stunned N/A Owner/operator 12
Unverified / Verbal only Unknown Unknown None 35
Note: These are default mappings. Individual establishments may achieve a different Tier based on their specific questionnaire responses and verified documentation. HMC certification is the slaughter baseline for Tier 0, but feed verification is an additional requirement. HMC alone should not be described as Tier 0 Tayyib unless the feed/welfare audit is also documented.
