A seven-tier classification framework grounded in classical Hanafi Fiqh, applied to every abattoir, supplier, certifier, and restaurant we assess.
Every establishment is measured against these four criteria. A failure on any single pillar triggers a downgrade.
The cut must be performed by a sane, adult Muslim using a sharp knife. Mechanical rotating blades are not valid regardless of who operates them — the Niyyah (intention) of the machine is meaningless.
At minimum three of four vessels must be severed: the windpipe (Hulqum), gullet (Mari'), and both jugular veins (Wadajayn). The Hanafi position requires three of four; failure produces Maytah.
"Bismillah Allahu Akbar" must be recited verbally and intentionally by the slaughterman for every individual animal. A batch recitation at line start or an audio recording is not valid by the Hanafi school.
Pre-slaughter stunning is avoided entirely. The animal must be alive and its blood must flow freely at the moment of the cut. Cardiac fibrillation from electric stunning causes blood retention, invalidating the meat.
